How to Make Delectable Passover Magic Bars

  1. Preheat oven to 350°F (175°C).
  2. Break 6 large matzos into pieces and place them in a food processor or blender.
  3. Process until finely crushed to make 2 cups of matzo crumbs (or use 2 cups of matzo meal).
  4. Generously grease a 13x9 inch baking pan with cooking spray.
  5. Melt 1/2 cup Smart Balance (or Smart Balance Light) in the prepared pan in the preheated oven for about 1 minute. Remove from oven.
  6. Evenly sprinkle 2 cups of matzo crumbs over the melted Smart Balance. Do not mix.
  7. Evenly sprinkle 1 cup semi-sweet chocolate chips over the matzo crumbs.
  8. Evenly sprinkle 1/2 cup dried cranberries, 1/2 cup chopped walnuts, and 1 cup sweetened shredded coconut over the chocolate chips.
  9. Place the can of sweetened condensed milk (14 oz) in a bowl of hot water for a few minutes to make it easier to drizzle.
  10. Drizzle the entire can of sweetened condensed milk evenly over the top layer.
  11. Bake for 20-25 minutes, or until golden brown.
  12. Let cool slightly before cutting into 24 squares. Cutting while still warm is easier.
