How to Make Delicate Cheesecake

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 12-inch springform pan.
  3. In a large bowl, beat together 16 ounces (450g) cream cheese and 1/2 cup (115g) unsalted butter until light and fluffy.

  5. Add 1/4 cup (30g) cornstarch and beat until just combined.

  7. Gradually add 1/2 cup (100g) granulated sugar to the egg whites, beating until stiff, glossy peaks form.
  8. Gently fold the egg whites into the cream cheese mixture until just combined.
  9. Pour batter into the prepared springform pan.
  10. Place the springform pan in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan (this creates a water bath).
