  2. Grease and flour a 12-inch springform pan.

  4. Add 1 cup (200g) granulated sugar, 4 large egg yolks, 1 tablespoon orange flower water, 1 tablespoon orange zest, 1 teaspoon vanilla extract, 1/2 teaspoon almond extract, and 1/4 teaspoon lemon extract. Beat on low speed for 2-3 minutes, or until well combined.
  5. Add 1/4 cup (30g) cornstarch and beat until just combined.
  6. In a clean bowl, beat 4 large egg whites until soft peaks form.
  7. Gradually add 1/2 cup (100g) granulated sugar to the egg whites, beating until stiff, glossy peaks form.
  8. Gently fold the egg whites into the cream cheese mixture until just combined.
  9. Pour batter into the prepared springform pan.
  10. Place the springform pan in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan (this creates a water bath).
  11. Bake for 40-45 minutes, or until the center is just set and the edges are lightly golden brown.
  12. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  13. Remove the cheesecake from the oven and let it cool completely on a wire rack.

  15. To unmold: Run a thin knife around the edges of the cheesecake. Carefully release the sides of the springform pan. Place a serving plate on top of the pan and invert the cheesecake onto the plate.
