How to Make Easy Crock Pot Dutch Oven Rabbit

  1. Cut 1 whole rabbit (approximately 2-3 lbs) into serving pieces.
  2. In a large crock-pot or Dutch oven, layer 1 lb peeled and quartered potatoes, 1 lb peeled and chopped carrots, and 1 large chopped onion.
  3. Place the rabbit pieces on top of the vegetables.
  4. Sprinkle generously with 1 tbsp paprika, 1 tsp dried thyme, 1 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper (or your preferred spice blend).
  5. Pour one (10.75 oz) can of cream of mushroom soup (or similar) over the rabbit and vegetables.
  6. Cover the crock-pot and cook on low for 4 hours, or until the rabbit is easily fork-tender. If using a Dutch oven, preheat oven to 325°F (160°C). Place the Dutch oven in the oven for approximately 2 hours or until rabbit is tender. If cooking on coals as indicated in original, maintain a good bed of coals and cook for 2 hours, checking frequently and adjusting coals as needed.
  7. (Optional) Add 1 cup of fresh or frozen peas during the last 30 minutes of cooking.
  8. Serve hot with rice and a fresh salad.
