How to Make Egg Mice

  1. Gently remove a thin slice (about 1/8 inch) from the bottom of each hard-boiled egg to create a flat base, preventing rolling.
  2. This flat side will be the bottom of your mouse.
  3. Slice a salami stick lengthwise in half.
  4. From each salami half, cut two thin, lengthwise strips (about 1/4 inch wide) for the tails.
  5. Cut the remaining salami halves in half crosswise to create four ear pieces.
  6. At the smaller end of the egg (opposite the flat base), make a small slit in the center just large enough to insert a small broccoli floret – this is the nose.
  7. Just above the nose, make two tiny holes and insert two raisins for the eyes.
  8. On each side of the egg, starting at the smaller end near the nose, cut two small slits (about 1/3 of the way down the egg). Insert the triangular salami pieces (ears) into the slits.
  9. Cut a small cheese cube in half crosswise to create two triangles; one for each mouse.
  10. Arrange the egg mice on a dark-colored platter or serving tray. Decorate with cheese triangles and serve immediately.
