Ingredients for Apple Swirls

  • 250ml milk
  • 100g unsalted butter
  • 500g all-purpose flour
  • Active Dry Yeast
  • 80g granulated sugar
  • 2 medium apples (about 400g)
  • 1 teaspoon ground cinnamon

How to Make Apple Swirls

  1. Gently heat 250ml milk in a small saucepan over low heat.
  2. Add 70g of unsalted butter to the warm milk and stir until melted.
  3. In a large bowl, whisk together 500g all-purpose flour, 7g active dry yeast, and 30g granulated sugar.
  4. Gradually add the lukewarm butter-milk mixture to the dry ingredients, mixing until a shaggy dough forms.
  5. Using a dough hook (or your hands), knead the dough for 5-7 minutes until smooth and elastic.
  6. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 40 minutes, or until doubled in size.
  7. While the dough rises, prepare the apple filling: Peel and core 2 medium apples (about 400g). Cut into 1/2cm pieces.
  8. Melt 30g unsalted butter in a medium saucepan over medium heat.
  9. Add the apple pieces, 50g granulated sugar, and 1 teaspoon ground cinnamon to the saucepan.
  10. Bring to a simmer, cover, and cook for 5 minutes, or until apples are softened but not mushy. Remove from heat and let cool completely.
  11. Lightly flour your work surface and the dough.
  12. Knead the dough briefly and roll it out into a 32cm x 40cm rectangle.
  13. Spread the cooled apple filling evenly over the dough, leaving a 2cm border on the shorter sides.
  14. Tightly roll up the dough starting from a shorter side, jelly-roll style.
  15. Using a sharp knife, slice the roll into 8 equal pieces.
  16. Place the swirls onto a baking sheet lined with parchment paper.
  17. Cover loosely with plastic wrap and let rise for 15 minutes in a warm place.
  18. Brush the tops of the swirls with milk and sprinkle with granulated sugar.
