Ingredients for Apple Swirls
- 250ml milk
- 100g unsalted butter
- 500g all-purpose flour
- Active Dry Yeast
- 80g granulated sugar
- 2 medium apples (about 400g)
- 1 teaspoon ground cinnamon
How to Make Apple Swirls
- Gently heat 250ml milk in a small saucepan over low heat.
- Add 70g of unsalted butter to the warm milk and stir until melted.
- In a large bowl, whisk together 500g all-purpose flour, 7g active dry yeast, and 30g granulated sugar.
- Gradually add the lukewarm butter-milk mixture to the dry ingredients, mixing until a shaggy dough forms.
- Using a dough hook (or your hands), knead the dough for 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 40 minutes, or until doubled in size.
- While the dough rises, prepare the apple filling: Peel and core 2 medium apples (about 400g). Cut into 1/2cm pieces.
- Melt 30g unsalted butter in a medium saucepan over medium heat.
- Add the apple pieces, 50g granulated sugar, and 1 teaspoon ground cinnamon to the saucepan.
- Bring to a simmer, cover, and cook for 5 minutes, or until apples are softened but not mushy. Remove from heat and let cool completely.
- Lightly flour your work surface and the dough.
- Knead the dough briefly and roll it out into a 32cm x 40cm rectangle.
- Spread the cooled apple filling evenly over the dough, leaving a 2cm border on the shorter sides.
- Tightly roll up the dough starting from a shorter side, jelly-roll style.
- Using a sharp knife, slice the roll into 8 equal pieces.
- Place the swirls onto a baking sheet lined with parchment paper.
- Cover loosely with plastic wrap and let rise for 15 minutes in a warm place.
- Brush the tops of the swirls with milk and sprinkle with granulated sugar.
- Bake in a preheated oven at 200°C (400°F) for 25-30 minutes, or until golden brown.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
