How to Make Farmhouse Manicotti With Optional Meat Sauce

  1. Preheat oven to 350°F (175°C). Grease a 13x9 inch baking pan.
  2. Cook manicotti shells according to package directions. Rinse and drain well.
  3. While the manicotti cooks, brown 1 lb ground beef in a medium skillet over medium-high heat. Drain excess fat.
  4. In the same skillet, stir in 24 oz (2 jars) your favorite spaghetti sauce. Simmer for 10 minutes.
  5. In a medium bowl, combine 15 oz ricotta cheese, 1 cup grated fresh mozzarella cheese (reserve extra for topping), 1/4 cup chopped fresh basil, and salt & pepper to taste.
  6. Spoon about 1/3 of the meat sauce into the prepared baking pan.
  7. Fill each manicotti shell with the ricotta mixture. You can use a piping bag or a ziplock bag with a corner snipped off for easier filling.
  8. Arrange the filled manicotti shells in the prepared pan over the meat sauce.
  9. Pour the remaining meat sauce over the manicotti.
  10. Sprinkle with the remaining mozzarella cheese.
  11. Bake for 15 minutes.
  12. Sprinkle with 1/2 cup grated Parmesan cheese.
  13. Bake for an additional 10 minutes, or until the cheese is melted and bubbly and the manicotti is heated through.
  14. Let stand for 5 minutes before serving. Enjoy!
