How to Make Artichoke Stuffed Manicotti Weight Watchers

  1. Cook manicotti according to package directions. Drain in a colander and rinse under cold water to prevent sticking.
  2. Preheat oven to 350°F (175°C).
  3. Spray two shallow (approximately 9x13 inch) baking dishes with nonstick spray.
  4. In a food processor, combine the artichoke hearts, ricotta cheese, Parmesan cheese, scallions, salt, and pepper. Pulse until fairly smooth but still slightly chunky.
