- Part Skim Ricotta Cheese
- Parmesan Cheese

- 2 cups your favorite marinara sauce
- Part Skim Mozzarella Cheese
How to Make Artichoke Stuffed Manicotti Weight Watchers
- Cook manicotti according to package directions. Drain in a colander and rinse under cold water to prevent sticking.
- Preheat oven to 350°F (175°C).
- Spray two shallow (approximately 9x13 inch) baking dishes with nonstick spray.
- In a food processor, combine the artichoke hearts, ricotta cheese, Parmesan cheese, scallions, salt, and pepper. Pulse until fairly smooth but still slightly chunky.
- Using a small spoon or piping bag, fill each manicotti tube with about 3 tablespoons of the artichoke mixture.
- Spread 1 cup of marinara sauce evenly in the bottom of each baking dish.
