How to Make Artichoke Stuffed Manicotti Weight Watchers

  1. Cook manicotti according to package directions. Drain in a colander and rinse under cold water to prevent sticking.
  2. Preheat oven to 350°F (175°C).
  3. Spray two shallow (approximately 9x13 inch) baking dishes with nonstick spray.
  4. In a food processor, combine the artichoke hearts, ricotta cheese, Parmesan cheese, scallions, salt, and pepper. Pulse until fairly smooth but still slightly chunky.
  5. Using a small spoon or piping bag, fill each manicotti tube with about 3 tablespoons of the artichoke mixture.
  6. Spread 1 cup of marinara sauce evenly in the bottom of each baking dish.
  7. Arrange 6 manicotti in each dish, slightly overlapping if needed.
  8. Top the manicotti in each dish with the remaining marinara sauce.
  9. Sprinkle each dish with 1/2 cup of the mozzarella cheese.
  10. Cover each dish with foil.
  11. Bake, covered, for 30 minutes.
  12. Remove the foil and continue baking for another 10-15 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
  13. Let stand for 5-10 minutes before serving. Enjoy!
