How to Make Grilled Lobster
- Bring 2 gallons of water to a rolling boil in a large pot.
- Carefully add one live lobster to the boiling water. Cover the pot and cook for exactly 3 minutes.
- Remove the lobster using tongs and immediately transfer to a bowl of ice water to stop cooking.
- Repeat steps 2 and 3 with the second lobster.
- Once cooled slightly, turn the lobsters upside down and, using kitchen shears, carefully cut lengthwise from the head to the tail, splitting them in half.
- Preheat your grill to medium heat. Clean the grates well.
- Place lobster halves, cut-side down, on the preheated grill.
- Baste each half generously with 2 tablespoons of melted butter.
- Sprinkle with salt and pepper.
- Cover the grill and cook for 8-9 minutes, or until the meat in the thickest part of the tail is opaque and cooked through. (Cooking time may vary depending on the size of the lobster and grill heat).
- Remove from grill and let rest for a couple of minutes.
- Serve immediately with remaining melted butter in small bowls for dipping and lemon wedges.
