How to Make Grilled Lobster

  1. Bring 2 gallons of water to a rolling boil in a large pot.
  2. Carefully add one live lobster to the boiling water. Cover the pot and cook for exactly 3 minutes.
  3. Remove the lobster using tongs and immediately transfer to a bowl of ice water to stop cooking.
  4. Repeat steps 2 and 3 with the second lobster.
  5. Once cooled slightly, turn the lobsters upside down and, using kitchen shears, carefully cut lengthwise from the head to the tail, splitting them in half.
  6. Preheat your grill to medium heat. Clean the grates well.
  7. Place lobster halves, cut-side down, on the preheated grill.
  8. Baste each half generously with 2 tablespoons of melted butter.
  9. Sprinkle with salt and pepper.
  10. Cover the grill and cook for 8-9 minutes, or until the meat in the thickest part of the tail is opaque and cooked through. (Cooking time may vary depending on the size of the lobster and grill heat).
