How to Make Halloween Or Bonfire Toffee

  1. Line a baking tray with baking parchment and set aside.
  2. In a heavy-bottomed saucepan, combine the sugar, golden syrup, and butter. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
  3. Continue to cook, without stirring, until the mixture reaches 150°C (302°F) or the soft crack stage (a small amount dropped into cold water will form a soft, pliable ball).
  4. Remove from heat and immediately stir in the vanilla extract and sea salt.
  5. Quickly pour the toffee mixture onto the prepared baking tray and spread evenly to about 1/2cm thickness.
  6. Allow the toffee to cool completely and harden. This may take up to 1-2 hours.
  7. Once hardened, break the toffee into pieces and store in an airtight container.
