How to Make Ham Hash Browns
- Peel and boil 1 kg potatoes until tender. Drain well and mash thoroughly. Stir in 1/4 cup milk, 2 tablespoons butter, salt and pepper to taste, 1/2 cup chopped onion, and 1 cup diced cooked ham.
- Melt 2 tablespoons butter in a large skillet (approx. 25cm) over medium heat. Add the potato mixture and shape into a large, even patty.
- Cook undisturbed until the bottom is golden brown and crispy (about 5-7 minutes). Carefully flip the hash brown. Don't worry if it breaks slightly.
- Cook the other side until golden brown and crispy (another 5-7 minutes). Break into wedges and serve immediately, garnished with fresh parsley.
