How to Make Harvest Sweet Potatoes In A Pumpkin Shell

  1. Preheat oven to 375°F (190°C).
  2. Cut the top off of a small pumpkin (about 4-6 inches in diameter) and scoop out the seeds and pulp.
  3. Peel and cube 1.5 lbs of sweet potatoes.
  4. In a large bowl, combine the cubed sweet potatoes with 1/4 cup brown sugar, 1 tablespoon olive oil, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, and a pinch of salt.
  5. Toss well to coat the sweet potatoes evenly.
  6. Stuff the mixture into the hollowed-out pumpkin.
  7. If desired, add 1-2 tablespoons of spiced rum or brandy to the sweet potato mixture.
  8. Place the filled pumpkin in a baking dish and add about 1 inch of water to the bottom of the dish.
  9. Bake for 60-75 minutes, or until the sweet potatoes are tender and the pumpkin is slightly softened. Check for doneness by inserting a fork into the sweet potatoes.
  10. Let cool slightly before serving. Garnish with a sprinkle of cinnamon or a dollop of whipped cream (optional).
