How to Make Indian Tomato Rice
- Wash 1 cup basmati rice and soak in water for 30 minutes.
- Heat 2 tablespoons butter or oil in a large pan over medium heat. Add 1 tablespoon ginger paste and 1 tablespoon garlic paste.
- Stir and add 1 medium onion (finely chopped) and 1-2 green chilies (finely chopped).
- Cook until the onion is softened and translucent, about 5 minutes.
- Add the soaked rice to the pan.
- Stir in 4 cloves, 1 teaspoon garam masala, 1/2 teaspoon chili powder, 1/2 teaspoon sugar, 1/2 cup tomato puree, 2 tablespoons tomato sauce, and salt to taste.
- Add 2 cups of water, stir well, and bring to a boil.
- Taste and adjust seasoning as needed. Bring back to a boil.
- Reduce heat to low, cover the pan, and simmer for 15-20 minutes, or until the rice is cooked through and most of the water has been absorbed.
- Gently fold in 2 tablespoons chopped spring onions and 2 tablespoons chopped cilantro about 5 minutes before the rice is fully cooked.
- Fluff the rice with a fork before serving.
