How to Make Awesome Beef Enchiladas

  1. Brown 1 lb ground beef, 1 medium onion, 1 bell pepper, and 2 cloves minced garlic in a large skillet over medium-high heat until browned and vegetables are tender. Drain off any excess grease.
  2. Stir in 2 tablespoons of taco seasoning and 1/2 cup of enchilada sauce. Cook for 1 minute, stirring constantly.
  3. Remove from heat and stir in 4 ounces of softened cream cheese until melted and smooth. If using, stir in 1 (15-ounce) can of rinsed and drained black beans.
  4. Preheat oven to 350°F (175°C). Lightly grease a 13x9 inch baking dish with cooking spray or oil.
  5. Spread 1/2 cup of enchilada sauce in the bottom of the prepared baking dish.
  6. Warm the flour tortillas according to package directions (microwave or skillet).
  7. Spoon approximately 1/4 cup of the meat mixture into the center of each warmed tortilla.
  8. Roll up the tortillas and place them seam-down in the prepared baking dish.
  9. Pour the remaining 1 cup of enchilada sauce evenly over the enchiladas.
  10. Sprinkle generously with 2 cups of shredded Monterey Jack cheese.
  11. Bake for 20 minutes, or until the cheese is melted and bubbly.
  12. Let stand for 5 minutes before serving. Serve with rice and beans, if desired.
