How to Make Joe's Molten Marshmallow Chocolate Cakes

  1. Melt 1 cup of semi-sweet chocolate chips and 1/2 cup (1 stick) of unsalted butter in a 3- to 4-quart saucepan over very low heat, stirring until smooth and creamy.
  2. Remove from heat and whisk in 1 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract until well combined.
  3. Gently fold in 1/2 cup of all-purpose flour until just incorporated. Do not overmix.
  4. Butter and flour six ramekins (6-ounce size). Fill each ramekin about halfway with batter.
  5. Gently press one mini marshmallow (approximately 1 inch diameter) into the center of the batter in each ramekin.
  6. Spoon the remaining batter equally over the marshmallows, completely covering them.
  7. Bake in the center of a preheated 350°F (175°C) regular oven, or 325°F (165°C) convection oven, for 12-15 minutes, or until the tops are puffed and crackly. Baking time may vary depending on your oven.
  8. Let the cakes cool for about 10 minutes. Run a thin knife along the inside edges of the ramekins to loosen the cakes.
  9. Carefully invert the ramekins onto plates to release the cakes.
  10. Place the cakes right side up on plates and dust with powdered sugar, if desired.
  11. Serve warm and enjoy the delightful marshmallow surprise!
