- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together 1 cup (2 sticks) softened unsalted butter, ¾ cup granulated sugar, and ¾ cup packed brown sugar until light and fluffy.
- Beat in 2 large eggs and 1 teaspoon vanilla extract.
- In a separate bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in 2 cups chocolate chips and 4 ounces cooked and crumbled bacon (patted dry).
- Chill the dough for at least 1 hour (or up to 24 hours).
- Preheat oven to 350°F (175°C).
- Roll dough into 1 ½-inch balls and place them 2 inches apart on the prepared baking sheets.
- Gently flatten each ball with a fork.
- Bake for 9-11 minutes, or until edges are golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While cookies cool, prepare the glaze: In a small bowl, whisk together 2 cups powdered sugar, 1 tablespoon maple extract, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, and 2-4 tablespoons milk or water until smooth.
- Once cookies are completely cool, drizzle the glaze over the top of each cookie. Top with a small piece of crispy bacon, if desired.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
