How to Make Key Lime Tarts

  1. Preheat oven to 350°F (175°C).
  2. Line two mini muffin tins with paper baking cups and lightly grease with cooking spray.
  3. Place one Key Lime Cooler cookie, flat side down, in the bottom of each baking cup.
  4. In a medium bowl, beat together 4 ounces cream cheese (softened), 1 large egg, 1/4 cup granulated sugar, 2 tablespoons key lime juice, and 1 tablespoon key lime zest until smooth and creamy.
  5. Carefully fill each prepared baking cup with the key lime filling to the top.
  6. Bake for 10-12 minutes, or until the filling is set around the edges but still slightly jiggly in the center.
  7. Remove from oven and let the tarts cool completely in the muffin tins before transferring to a wire rack to cool completely.
  8. Once completely cool, top each tart with a dollop of whipped cream and a lime wedge (optional).
