How to Make Marshmallow Animals
- In a medium saucepan, combine 1 cup granulated sugar, ½ cup light corn syrup, ½ cup water, and a pinch of salt. Stir over medium heat until sugar dissolves.
- Clip a candy thermometer to the side of the pan and bring the mixture to a boil, without stirring. Continue to cook until the mixture reaches 240°F (115°C) - the hard-crack stage.

- Slowly pour the hot sugar syrup into the egg whites while beating on high speed. Continue beating until the mixture is thick, glossy, and completely cooled.
- Gently fold in 1 teaspoon vanilla extract.
- Lightly grease a rimmed baking sheet. Using an offset spatula, spread the marshmallow mixture evenly to about ½ inch thickness on the baking sheet.
- Allow to sit, uncovered, overnight in a cool, dry place.
- Using cookie cutters, cut out your desired shapes and transfer to a wire rack.
