How to Make Microwave Citrus Marmalade

  1. Finely grate the zest of one orange and one lime. Set aside.
  2. Peel one orange and one lime. Roughly chop the peeled fruit.
  3. Place the chopped fruit in a food processor and puree until coarsely chopped. (Do not over-process.)
  4. In a 12-cup microwave-safe bowl, combine the fruit puree, orange and lime zest, 1 cup of sugar, and 1/4 cup of water.
  5. Microwave on high for 8-10 minutes, stirring once halfway through. The mixture should reach a full roiling boil and continue boiling vigorously for at least 1 minute.
  6. Remove from the microwave and let cool slightly (about 5-10 minutes).
  7. Pour the marmalade into sterilized jars, leaving about 1/2 inch of headspace.
  8. Cover the jars tightly and refrigerate. The marmalade will thicken as it cools.
  9. Keeps well for at least two weeks in the refrigerator.
