How to Make My Famous Outrageous Brownies

  1. Preheat oven to 180°C (350°F).
  2. Line an 8x8 inch baking pan with aluminum foil, leaving an overhang on the sides for easy removal. Lightly grease the foil with butter.
  3. In a medium saucepan, melt 170g (1 1/2 sticks) unsalted butter over medium heat. Whisk until completely melted and smooth.
  4. Remove from heat. Add 170g (1 1/4 cups) unsweetened cocoa powder and whisk vigorously until smooth and completely lump-free.
  5. Add 340g (1 3/4 cups) granulated sugar and whisk until well combined.
  6. Let the mixture cool for 2 minutes.
  7. Transfer the mixture to a large bowl.
  8. Add 4 large eggs and 2 teaspoons of vanilla extract. Mix until thoroughly combined.
  9. In a separate bowl, whisk together 170g (1 1/2 cups) all-purpose flour and 1/2 teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, using a rubber spatula to gently fold until just combined. Do not overmix.
  10. Scrape the batter into the prepared pan.
  11. Spread the batter evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached (don't overbake!).
  12. Let the brownies cool completely in the pan before lifting them out using the foil overhang. Cut into squares and enjoy!
