How to Make Oaty Currant Bread

  1. Preheat your oven to 180°C (350°F). Grease and flour a 20 x 13 cm loaf tin.
  2. In a large mixing bowl, combine 225g plain flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, and 175g rolled oats.
  3. In a separate bowl, whisk together 110g golden syrup (molasses), 170g plain yogurt, 100g currants, and 50ml milk.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf tin. Let it stand for 10 minutes to allow the oats to absorb the liquid.
  6. Bake for 55-60 minutes, or until a skewer inserted into the center comes out clean.
  7. Let the bread cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
  8. Serve warm, sliced, and generously buttered. Enjoy!
