  • Rolled Oats
  • Plain Flour
  • Caster Sugar
  • Desiccated Coconut
  • Chocolate Chips
  • 1/2 cup golden syrup
  • 125g (1/2 cup) butter
  • Bicarbonate Of Soda
  • 2 tablespoons hot water

How to Make Anzac Slice

  1. Preheat oven to 160°C (320°F).
  2. Grease and line a 20cm x 30cm (8" x 12") baking tin with parchment paper.
  3. In a large bowl, combine 2 cups rolled oats, 1 cup plain flour, 1 cup brown sugar, 1 cup chocolate chips (optional), and 1 cup desiccated coconut.
  4. In a small saucepan, melt 125g (1/2 cup) butter and 1/2 cup golden syrup over medium-low heat, stirring frequently.
  5. In a small bowl, combine 1 teaspoon baking soda and 2 tablespoons hot water. Add this mixture to the melted butter and golden syrup, stirring well.
  6. Pour the wet ingredients into the dry ingredients and mix thoroughly. The chocolate chips may melt slightly from the heat.
  7. Press the mixture firmly into the prepared tin. Bake for 20-30 minutes, or until golden brown and cooked through. Do not overbake, or the slice will become tough instead of chewy.
  8. Let the slice cool in the tin for 10 minutes before inverting it onto a wire rack to cool completely.
  9. Once cooled, cut into squares.
  10. For an extra decadent treat, melt 300g dark chocolate and pour it over the cooled slice.
