How to Make Orange Whipped Sweet Potatoes

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce 2 pounds of sweet potatoes several times with a fork.
  3. Place sweet potatoes on a baking sheet and roast for 45-55 minutes, or until tender.
  4. While sweet potatoes are roasting, combine 2 1/3 cups orange juice, 1/4 cup brown sugar, 4 tablespoons (1/2 stick) unsalted butter, 1/2 teaspoon salt, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon ground ginger in a medium saucepan.
  5. Heat the orange juice mixture over medium heat, stirring occasionally, until the butter is melted and the sugar is dissolved.
  6. Once sweet potatoes are tender, remove from oven and let cool slightly.
  7. Once cool enough to handle, peel and add the sweet potatoes to a large mixing bowl.
  8. Add the warm orange juice mixture to the sweet potatoes.
  9. Mash the sweet potatoes and orange juice mixture until smooth and creamy. Add more orange juice if needed to reach desired consistency.
  10. Serve warm and enjoy! Garnish with extra orange zest (optional).
