How to Make Paradise Pear Jam

  1. Remove the rind from 1 large orange and 1 lemon in quarters.
  2. Discard approximately half of the white pith from the orange and lemon rinds.
  3. Thinly slice the rinds using a vegetable peeler or sharp knife.
  4. Chop the remaining orange and lemon pulp, discarding any seeds.
  5. Peel, core, and coarsely chop 4 large ripe pears.
  6. Combine the chopped pears, orange pulp, lemon pulp, sliced rinds, cherries, and crushed pineapple (including its juice) in a large bowl.
  7. Measure 4 1/2 cups of the fruit mixture into a large, heavy-bottomed saucepan.
  8. Stir in the powdered pectin.
  9. Place the saucepan over high heat, stirring constantly until the mixture comes to a full rolling boil that cannot be stirred down.
  10. Immediately stir in 4 cups of granulated sugar.
  11. Return the mixture to a full rolling boil and boil hard for exactly 1 minute, stirring constantly to prevent scorching.
  12. Remove from heat and skim off any foam that has formed on the surface using a spoon.
  13. Stir the jam gently for 5 minutes to cool slightly and prevent fruit from floating to the top.
  14. Quickly ladle the hot jam into sterilized jars, leaving 1/4-inch headspace.
  15. Seal the jars immediately using the appropriate lids and rings.
  16. Process the jars in a boiling water bath for 10 minutes to ensure proper sealing (adjust processing time based on your altitude).
