How to Make Baked Cranberry Conserve

  1. Preheat oven to 350°F (175°C).
  2. Grease a shallow 8x8 inch baking dish.
  3. Add 12 ounces (340g) fresh cranberries and 1 cup (200g) packed light brown sugar to the prepared baking dish.
  4. Gently toss the cranberries and brown sugar to evenly coat.
  5. Cover the baking dish with foil or a lid. Bake for 1 hour, stirring gently halfway through.
  6. Remove from oven and stir in 1/4 cup (60ml) fresh lemon juice, 1/2 cup (120g) orange marmalade, and 1/2 cup (60g) chopped walnuts.
  7. Return to the oven, uncovered, and bake for an additional 15 minutes, or until the cranberries have burst and the conserve has thickened slightly.
  8. Remove from oven and let cool completely to room temperature. This allows the flavors to meld.
  9. Store leftover conserve in an airtight container in the refrigerator for up to 2 weeks.
