How to Make Peach Melba Jam

  1. Combine 4 cups peeled and sliced fresh peaches and 3 cups granulated sugar in a large, heavy-bottomed saucepan.
  2. Cover and let stand for at least 1 hour, or up to 2 hours, to macerate, gently tossing once or twice.
  3. Cook over medium-low heat, stirring frequently, until the sugar dissolves and the mixture begins to thicken and darken, about 25-30 minutes. Be careful not to burn. Add 1 cup raspberries and continue cooking over medium-low heat, stirring constantly, until the mixture reaches a jam-like consistency, about 10-15 minutes. The jam should thicken as it cools.
  4. Remove from heat and stir in 2 tablespoons of Chambord liqueur.
  5. Immediately pour the hot jam into 2 sterilized 1-pint freezer-safe jars, leaving about 1/2 inch headspace.
  6. Seal the jars tightly. Let the jars cool completely before storing in the freezer. Once thawed, keep refrigerated and consume within 2-3 weeks.
