How to Make Pineapple Foster

  1. In a deep saucepan, combine 1/2 cup (100g) packed light brown sugar, 1/4 cup (60ml) butter, 1/4 cup (60ml) dark rum (or substitute with pineapple juice for a non-alcoholic version), and 1 teaspoon vanilla extract.
  2. Cook over medium heat, stirring constantly, for 5 minutes, or until the sugar is completely dissolved and the mixture begins to bubble.
  3. Add 2 cups (400g) fresh pineapple chunks and continue to cook and stir for 6-8 minutes, until the sauce has thickened slightly and the pineapple is tender but still holds its shape.
  4. Remove from heat and let stand for 5 minutes to allow the sauce to thicken further.
  5. Stir in 2 tablespoons (30g) of cold butter until melted and the sauce is smooth and glossy.
  6. Serve immediately over vanilla ice cream.
