How to Make Pumpkin Butter Cooked

  1. In a 2-quart saucepan, combine 3 cups pumpkin puree, 1 ½ cups granulated sugar, 2 tablespoons pumpkin pie spice, and 1 tablespoon unflavored gelatin.
  2. Stir until the sugar and spices are evenly distributed throughout the pumpkin puree.
  3. Place the saucepan over medium-high heat and bring the mixture to a rolling boil.
  4. Reduce heat to low, and simmer while stirring constantly for 5 minutes. The mixture will begin to thicken.
  5. Using a ladle or canning funnel, carefully spoon the hot pumpkin butter into sterilized canning jars, leaving ¼ inch of headspace at the top of each jar.
  6. Remove any air bubbles by gently running a non-metal utensil around the inside of the jars.
  7. Wipe the rims of the jars clean with a damp cloth to ensure a good seal.
  8. Immediately place lids on the jars and tighten the bands fingertip tight.
  9. Process the filled jars in a boiling water bath for 10 minutes. Ensure jars are fully submerged during processing.
  10. Remove the jars from the water bath and allow to cool completely. You should hear a ‘pop’ sound as the jars seal. Check seals by pressing on the center of the lid – if it doesn’t flex, it’s sealed!
