How to Make Raspberry Cordial

  1. Combine 4 cups frozen raspberries and 2 cups granulated sugar in a medium saucepan.
  2. Cook over medium heat for 20-25 minutes, stirring occasionally, until the sugar dissolves and the raspberries have softened.
  3. Remove from heat and gently mash the raspberry mixture with a potato masher or the back of a spoon until desired consistency is reached.
  4. Line a fine-mesh sieve with cheesecloth and set it over a large bowl. Pour the raspberry mixture through the sieve, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
  5. Add the juice of 2 lemons to the strained raspberry juice.
  6. Stir in 4 cups of boiling water.
  7. Let the cordial cool completely to room temperature.
  8. Refrigerate for at least 2 hours to allow the flavors to meld. Serve chilled.
