How to Make Rhubarb Cordial

  1. Preheat oven to 350°F (175°C). Chop 1 lb (450g) rhubarb into 1-inch pieces.
  2. Combine chopped rhubarb, 1 cup (240ml) water, zest of 1 lemon, and the juice of ½ lemon in a large saucepan.
  3. Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer for 15-20 minutes, or until the rhubarb is very tender and has broken down.
  4. Remove from heat and let the mixture cool slightly.
  5. Strain the mixture through a fine-mesh sieve or cheesecloth-lined strainer into a bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.
  6. Return the strained liquid to the saucepan. Add 1 cup (200g) granulated sugar (adjust to taste based on rhubarb sweetness).
  7. Bring the mixture to a gentle boil over medium heat, stirring constantly until the sugar is completely dissolved.
  8. Remove from heat and let cool completely. Once cool, bottle and refrigerate. Enjoy your homemade Rhubarb Cordial!
