How to Make Roast Goose With Caramelized Apples

  1. Preheat oven to 350°F (175°C). Position rack in the lower third of the oven.
  2. Rinse the goose inside and out and pat it completely dry with paper towels.
  3. Generously sprinkle the inside and outside of the goose with salt and pepper.
  4. Using a sharp knife, carefully make small slits all over the goose skin.
  5. Insert thin slices of garlic into the slits.
  6. Place the goose on a rack in a large roasting pan, breast side down.
  7. Roast for 2 hours and 45 minutes, basting occasionally with pan drippings and removing excess fat from the pan.
  8. Reserve 6 tablespoons of the rendered goose fat.
  9. Carefully turn the goose breast-side up.
  10. Continue roasting until a meat thermometer inserted into the thickest part of the thigh registers 175°F (80°C), basting occasionally, about 45 minutes more.
  11. While the goose roasts, prepare the apples: In a large bowl, toss the apple slices with lemon juice.
  12. Pour the reserved 6 tablespoons of goose fat into a 15x10x2-inch glass baking dish.
  13. Using a slotted spoon, transfer the apples to the baking dish.
  14. Toss the apples gently in the goose fat to coat evenly.
  15. Add the sugar, Calvados (or apple brandy), and cinnamon to the apples. Toss to combine.
  16. Place the baking dish with the apples in the oven alongside the goose during the last hour of cooking.
  17. Bake until the apples are very tender and golden brown, about 1 hour.
  18. Remove the goose and apples from the oven. Let the goose rest for at least 15-20 minutes before carving.
  19. Serve the carved goose with the delicious caramelized apples. Enjoy!
