How to Make Whitley Goose
- Preheat your oven to 200°C (400°F).
- Place 1 kg of onions (about 6 medium-sized) in a saucepan and cover with lightly salted water (approx. 500ml).
- Bring to a boil, then reduce heat and simmer gently for 15-20 minutes, or until the onions are very tender.
- Drain the onions well in a colander and allow to cool slightly.
- Roughly chop the onions. In a bowl, combine the chopped onions with 150g of grated cheese (cheddar recommended).
- Season with freshly ground black pepper to taste. Add salt if desired.
- Butter a medium-sized ovenproof dish (approx. 1.5-2 litre capacity). Pour 200ml of double cream into the dish.
- Gently stir the onion and cheese mixture into the cream.
- Top with the remaining 50g of grated cheese.
- Bake for 20-30 minutes, or until the top is golden brown and bubbly. Serve hot as a side dish or a light main course.
