- In the last hour of turkey roasting (or while the turkey rests after frying), scatter 1 cup chopped carrots, 1/2 cup chopped celery, and 6 cloves minced garlic in the bottom of the roasting pan (or a large skillet).
- In a 3-quart saucepan, bring 2 cups chicken broth to a boil over medium heat.
- Reduce heat to low and simmer for 10 minutes, until reduced by about half.
- When the turkey is cooked, remove the carrots and celery from the pan and place them in a blender or food processor.
- Add the reduced chicken broth to the blender with the carrots and celery. Puree until completely smooth.
- Add half (3 cloves) of the minced garlic to the puree. Blend until combined, then taste and adjust seasoning as needed.
- Add more minced garlic (1-2 cloves), to taste, if desired.
- Stir in 1 teaspoon salt and 1/2 teaspoon black pepper. Just before serving, stir in 2 tablespoons chopped fresh parsley, 1 tablespoon chopped fresh chives, and 1/2 teaspoon dried savory.
