How to Make Roasted Garlic Herb Gravy

  1. In the last hour of turkey roasting (or while the turkey rests after frying), scatter 1 cup chopped carrots, 1/2 cup chopped celery, and 6 cloves minced garlic in the bottom of the roasting pan (or a large skillet).
  2. In a 3-quart saucepan, bring 2 cups chicken broth to a boil over medium heat.
  3. Reduce heat to low and simmer for 10 minutes, until reduced by about half.
  4. When the turkey is cooked, remove the carrots and celery from the pan and place them in a blender or food processor.
  5. Add the reduced chicken broth to the blender with the carrots and celery. Puree until completely smooth.
  6. Add half (3 cloves) of the minced garlic to the puree. Blend until combined, then taste and adjust seasoning as needed.
  7. Add more minced garlic (1-2 cloves), to taste, if desired.
  8. Stir in 1 teaspoon salt and 1/2 teaspoon black pepper. Just before serving, stir in 2 tablespoons chopped fresh parsley, 1 tablespoon chopped fresh chives, and 1/2 teaspoon dried savory.
