- Raw Potatoes

How to Make Rschti
- Peel 2 lbs (900g) of potatoes and grate them into fine strips using a box grater.
- Heat 2 tablespoons of vegetable oil or butter in a large, non-stick skillet over medium heat.
- Add the grated potatoes to the skillet. Sprinkle with 1 teaspoon of salt and stir gently to coat evenly with the fat.
- Cover the skillet and cook for 20-30 minutes, stirring occasionally to prevent sticking. Reduce heat if needed to avoid burning.
- Remove the lid, increase the heat to medium-high, and cook for another 15-20 minutes, or until golden brown and crispy. Do not stir during this time.
- Using a spatula, carefully shape the potato mixture into a large, even cake.
- Carefully flip the Rösti using a large, flat spatula or a plate. Cook for another 5-7 minutes, or until golden brown on the other side.
- Serve immediately. Garnish with fresh herbs, sour cream or a fried egg (optional).
