How to Make Rschti

  1. Peel 2 lbs (900g) of potatoes and grate them into fine strips using a box grater.
  2. Heat 2 tablespoons of vegetable oil or butter in a large, non-stick skillet over medium heat.
  3. Add the grated potatoes to the skillet. Sprinkle with 1 teaspoon of salt and stir gently to coat evenly with the fat.
  4. Cover the skillet and cook for 20-30 minutes, stirring occasionally to prevent sticking. Reduce heat if needed to avoid burning.
  5. Remove the lid, increase the heat to medium-high, and cook for another 15-20 minutes, or until golden brown and crispy. Do not stir during this time.
  6. Using a spatula, carefully shape the potato mixture into a large, even cake.
  7. Carefully flip the Rösti using a large, flat spatula or a plate. Cook for another 5-7 minutes, or until golden brown on the other side.
  8. Serve immediately. Garnish with fresh herbs, sour cream or a fried egg (optional).
