  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Season 4 boneless, skinless chicken breasts (about 1.5 lbs total) with salt and pepper.
  3. Add chicken breasts to the skillet and cook for 5-7 minutes per side, until lightly browned.
  4. Remove chicken from skillet and set aside on paper towels to drain excess oil.
