How to Make Southwest Chicken Bundles
- Place thawed chicken breasts between two sheets of plastic wrap and pound to 1/4-inch thickness using a meat mallet.
- Season each chicken breast generously with salt and pepper.
- In a small bowl, combine 1 cup shredded Monterey Jack cheese and 1/2 cup shredded cheddar cheese (optional).
- Divide the cheese mixture into 6 equal portions and roll each into a ball.
- Wrap one cheese ball with a seasoned chicken breast to form a bundle.
- Cut each slice of bacon in half. Arrange two bacon halves in a cross pattern on top of each chicken bundle.
- Bring the bacon ends up and over the bundle, securing with a toothpick.

- Arrange the chicken bundles in a 9x13 inch baking dish. Bake uncovered at 350°F (175°C) for 30 minutes.
