How to Make Spiced Pumpkin Preserves

  1. Prick pumpkin chunks (about 6 cups) with a fork.
  2. In a large saucepan, combine 2 cups sugar, 1 cup apple cider vinegar, 1/2 cup water, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground cloves, 1/4 teaspoon ground nutmeg, and 2 cinnamon sticks. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and simmer for 5 minutes to create a flavorful syrup.
  3. Add the pricked pumpkin chunks to the simmering syrup. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the pumpkin is tender but still holds its shape.
  4. While the pumpkin simmers, sterilize your pint jars and lids in boiling water for at least 10 minutes.
  5. Carefully spoon the hot pumpkin mixture into the sterilized jars, leaving 1/4 inch headspace at the top of each jar.
  6. Top with hot syrup, again leaving 1/4 inch headspace.
  7. Remove any air bubbles by gently running a non-metallic utensil around the inside of the jar.
  8. Wipe the jar rims clean with a damp cloth.
  9. Place lids and rings on the jars, tightening fingertip-tight.
  10. Process in a boiling water bath for 15 minutes. Ensure jars are completely submerged.
  11. Remove jars and let cool completely. You should hear a popping sound as the jars seal.
  12. Once cool, check seals by pressing down on the center of each lid. If the lid doesn't flex, it's sealed properly.
  13. Allow the preserves to age for at least 2-3 weeks for optimal flavor development. Store in a cool, dark place.
