How to Make Strawberry Brownie Ice Cream Sundae

  1. Prepare brownie mix according to package directions, or bake your own favorite brownie recipe. Do not add any extra ingredients, such as nuts or chips.
  2. Bake brownies and let cool completely.
  3. In a small saucepan, combine 1 cup (150g) sliced strawberries, 1/4 cup (50g) granulated sugar, 1 teaspoon vanilla extract, 2 tablespoons lemon juice, and a pinch of salt.
  4. Bring the mixture to a boil for 2 minutes.
  5. Pour the hot strawberry mixture over 2 1/2 cups (375g) sliced strawberries in a bowl. Gently stir and let macerate for at least one hour (longer is better!).
  6. Cut cooled brownies into bite-sized cubes.
  7. In the bottom of a clear glass bowl or sundae dish, layer 2 cups (300g) of the macerated strawberries.
  8. Top with a layer of the brownie cubes.
  9. Add 1/2 of a pint (about 1 cup, or 115g) of softened ice cream. Spread evenly to seal.
  10. Place the bowl in the refrigerator or freezer until the ice cream is firm (about 30 minutes).
  11. Drizzle with caramel sauce.
  12. Add the remaining ice cream, sealing the top.
  13. Drizzle with chocolate sauce.
  14. Freeze for at least 30 minutes to allow the layers to set.
  15. When ready to serve, top with the remaining macerated strawberries and whipped cream, if desired.
