How to Make Tarragon Lemonade

  1. In a medium saucepan, combine 4 cups (960ml) of water and 1 cup (200g) of granulated sugar. Bring to a boil over medium-high heat, stirring until the sugar is completely dissolved.
  2. Reduce the heat to medium-low and simmer for 20-25 minutes, or until the syrup has reduced to 3 1/4 cups (780ml).
  3. Remove from heat and add 5 sprigs of fresh tarragon.
  4. Let the syrup steep, stirring occasionally, until it has completely cooled to room temperature (approximately 30 minutes).
  5. Remove and discard the tarragon sprigs.
  6. In a large pitcher, combine the cooled tarragon syrup with 6 cups (1.4L) of cold water and the juice of 10 lemons (approximately 1 cup/240ml).
  7. Add a pinch of salt (about 1/4 teaspoon) and stir until dissolved.
  8. Serve your Tarragon Lemonade immediately over ice. Garnish each glass with a lemon wedge and 2-3 sprigs of fresh tarragon.
