How to Make Tarragon Lemonade
- In a medium saucepan, combine 4 cups (960ml) of water and 1 cup (200g) of granulated sugar. Bring to a boil over medium-high heat, stirring until the sugar is completely dissolved.
- Reduce the heat to medium-low and simmer for 20-25 minutes, or until the syrup has reduced to 3 1/4 cups (780ml).
- Remove from heat and add 5 sprigs of fresh tarragon.
- Let the syrup steep, stirring occasionally, until it has completely cooled to room temperature (approximately 30 minutes).
- Remove and discard the tarragon sprigs.
- In a large pitcher, combine the cooled tarragon syrup with 6 cups (1.4L) of cold water and the juice of 10 lemons (approximately 1 cup/240ml).
- Add a pinch of salt (about 1/4 teaspoon) and stir until dissolved.
- Serve your Tarragon Lemonade immediately over ice. Garnish each glass with a lemon wedge and 2-3 sprigs of fresh tarragon.
