How to Make Tarragon Syrup

  1. In a medium saucepan, combine 1 cup of water and 1 ½ cups of granulated sugar.
  2. Bring the mixture to a boil over medium heat, stirring constantly until the sugar is completely dissolved.
  3. Add ½ cup of fresh tarragon leaves (packed).
  4. Reduce heat to low and gently simmer, uncovered, for 2 minutes.
  5. Remove from heat and cover the saucepan. Let the syrup steep for 10 minutes to allow the tarragon flavor to infuse.
  6. Strain the syrup through a fine-mesh sieve or cheesecloth into a heat-safe bowl or container.
  7. Discard the used tarragon leaves.
  8. Transfer the strained syrup to an airtight container with a lid.
  9. Refrigerate for at least 2 hours before serving to allow the flavors to fully meld. Store in the refrigerator for up to 2 weeks.
  10. Makes approximately 2 cups of syrup.
