How to Make Tex Mex Skillet

  1. Heat 1 tablespoon of olive oil in a large skillet or saucepan with a tight-fitting lid over medium heat.
  2. Add 1 cup (½ lb) of your choice of ground meat (beef, pork, turkey, or chicken) and brown, breaking it apart with a spoon. Drain off any excess grease.
  3. Add 1 medium onion (chopped), 1 green bell pepper (chopped), and 1 (14.5 ounce) can of diced tomatoes, undrained. Cook for 5-10 minutes, stirring occasionally, until the vegetables have softened.
  4. Stir in 1 cup of long-grain rice, 1 ½ cups of water or chicken broth, 1 teaspoon chili powder, ½ teaspoon cumin, ½ teaspoon garlic powder, ¼ teaspoon cayenne pepper (optional), and salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
  6. Add 1 (15 ounce) can of drained and rinsed kidney beans (or your favorite beans) and, if using pre-cooked meat, add it now.
  7. Continue to cook for another 10-15 minutes, or until the rice is tender and the liquid is absorbed.
  8. Garnish with shredded cheese, sour cream, or your favorite Tex-Mex toppings before serving.
