How to Make Texas Roasted Jalapeno Hot Sauce

  1. Preheat oven to 300°F (150°C). Line a baking sheet with foil.
  2. Slice 1 medium yellow onion into 1/2-inch thick slices.
  3. Place 1 pound jalapeno peppers (remove stems), onion slices, and 2 large tomatoes (halved) on the prepared baking sheet.
  4. Roast for 20-25 minutes, or until the peppers and onions show browning or slight charring.
  5. While the vegetables are roasting, mince 2 cloves of garlic.
  6. Once roasted, remove from oven and let cool slightly.
  7. Roughly chop the roasted vegetables.
  8. In a blender, combine half of the roasted jalapenos, half of a roasted tomato, and the minced garlic.
  9. Blend until smooth.
  10. Add the remaining roasted jalapenos, onion slices, remaining tomato, and 1 teaspoon of salt to the blender.
  11. Blend on low speed until you reach your desired consistency – chunky salsa is recommended!
  12. Taste and adjust seasoning as needed (add more salt or a pinch of sugar to balance the heat).
  13. Pour into a bowl and serve immediately with tortilla chips. Enjoy!
  14. Store leftovers in an airtight container in the refrigerator for up to 7-10 days. Heat index will vary depending on the type of peppers used.
