How to Make Thai Tea

  1. In a medium saucepan, bring 4 cups of water to a boil.
  2. Add 4 tablespoons of Thai red leaf tea and 2 star anise seeds. Remove from heat.
  3. Steep for 5 minutes, stirring occasionally to ensure all tea leaves are submerged.
  4. Strain the tea through a fine-mesh strainer or coffee filter into a large pitcher, discarding the tea leaves and star anise.
  5. Add 1/2 cup of sugar (or to taste) to the hot tea and stir until completely dissolved.
  6. Allow the tea to cool to room temperature.
  7. Cover and refrigerate until thoroughly chilled (at least 2 hours).
  8. Fill tall glasses with ice.
  9. Pour the chilled tea into the glasses, leaving about 1 inch of space at the top.
  10. Gently float 3-4 tablespoons of evaporated milk on top of the ice in each glass.
