How to Make Thai Flavoured Fish Packets

  1. Preheat oven to 200°C (400°F). Heat 1 tablespoon of oil in a small frying pan and stir-fry 1 leek (thinly sliced) and 100g bok choy (roughly chopped) until wilted.
  2. Cut 4 large squares (approximately 30cm x 30cm) of heavy-duty kitchen foil.
  3. Divide the cooked leeks and bok choy evenly among the foil squares.
  4. Place 2 (150g each) pieces of firm white fish (cod, haddock, or similar) on top of the vegetables in each foil square.
  5. In a small bowl, whisk together 2 tablespoons fish sauce, 2 tablespoons lime juice, 1-2 red chilies (finely chopped, adjust to taste), 1 tablespoon soy sauce, and 1 tablespoon brown sugar.
  6. Pour the sauce evenly over the fish in each foil packet.
  7. Carefully fold the foil over the fish and vegetables to create sealed packets. Crimp the edges well to prevent leakage.
  8. Place the foil packets on a baking tray and bake for 15 minutes.
  9. Let the packets sit for 2-3 minutes after baking to allow the steam to subside before opening. This prevents steam burns.
  10. Carefully open the packets and garnish with 2 tablespoons of fresh coriander, chopped. Serve immediately with your favorite noodles.
