How to Make The Baked Brownie

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9x13x2 inch glass or light-colored metal baking pan.
  3. In a medium bowl, whisk together 1 ½ cups all-purpose flour, ½ teaspoon salt, and ¾ cup unsweetened dark cocoa powder (like Valrhona). Set aside.
  4. Prepare a double boiler (or use a heat-safe bowl set over a saucepan of simmering water).
  5. In the top of the double boiler, combine 12 ounces (340g) bittersweet chocolate, 1 cup (2 sticks) unsalted butter, and 1 tablespoon instant espresso powder. Stir occasionally until melted and smooth.
  6. Remove from heat, but keep the bowl over the simmering water (to maintain warmth). Add 1 ¾ cups granulated sugar and ¾ cup packed light brown sugar.
  7. Whisk the sugars until fully incorporated. Remove from heat and let cool slightly to room temperature.
  8. Add 3 large eggs one at a time, whisking until just combined after each addition.
  9. Add the remaining 2 large eggs, whisking gently until just combined. Do not overmix.
  10. Add 2 teaspoons pure vanilla extract and stir until combined.
  11. Gently fold the dry ingredients (flour mixture) into the wet ingredients using a spatula until just combined. A few streaks of flour are okay.
  12. Pour batter into the prepared pan and spread evenly.
  13. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Start checking at 25 minutes.
  14. Let cool completely in the pan before cutting and serving. Enjoy!
