- Boil 1.5 lbs boneless, skinless chicken breasts in 4 cups of chicken broth until cooked through (about 15-20 minutes). Remove chicken from broth and shred or chop into 1-inch cubes using kitchen scissors.

- Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch Pyrex baking dish.
- Layer 1/3 of a 15oz bag crushed Fritos in the prepared baking dish. Top with 1 1/2 cups shredded cheddar cheese and 1/3 of the chicken mixture.
- Repeat layers (Fritos, cheese, chicken mixture) two more times.
- End with a layer of crushed Fritos.
