How to Make The Best King Ranch Casserole

  1. Boil 1.5 lbs boneless, skinless chicken breasts in 4 cups of chicken broth until cooked through (about 15-20 minutes). Remove chicken from broth and shred or chop into 1-inch cubes using kitchen scissors.
  2. Reserve 2 cups of the chicken broth; set aside. (You may not need all of it)
  3. In a large bowl, combine 10 oz can Rotel diced tomatoes and green chilies (undrained), 1 (10.75 oz) can condensed cream of mushroom soup, 1 (10.75 oz) can condensed cream of chicken soup, 1 medium onion (finely chopped), 1 cup sliced ripe olives, and the cooked chicken.
  4. Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch Pyrex baking dish.
  5. Layer 1/3 of a 15oz bag crushed Fritos in the prepared baking dish. Top with 1 1/2 cups shredded cheddar cheese and 1/3 of the chicken mixture.
  6. Repeat layers (Fritos, cheese, chicken mixture) two more times.
  7. End with a layer of crushed Fritos.
  8. Pour reserved chicken broth over the top layer if mixture seems dry.
