How to Make The Perfect Roast Chicken With Garlic And Sun Dried Tomatoes

  1. Preheat oven to 450°F (232°C).
  2. Rinse the chicken inside and out with cold water and pat dry thoroughly with paper towels.
  3. Season the chicken cavity generously with salt and pepper. Place two lemon halves inside.
  4. Place the chicken on a rack in a roasting pan.
  5. Gently loosen the skin from the breast and thighs. Evenly distribute 1/4 cup sun-dried tomatoes (oil-packed, drained), 4 cloves garlic (thinly sliced), and 2 sprigs fresh rosemary between the skin and meat.
  6. Sprinkle the outside of the chicken with 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon sugar.
  7. Turn the chicken breast-side down and roast for 30 minutes.
