How to Make Three Fruit Marmalade

  1. Wash and thoroughly clean 2 cups of mixed fruit (oranges, lemons, grapefruit, etc.)
  2. Remove the zest from the fruits using a zester or vegetable peeler. Set aside.
  3. Cut the fruits in half and remove all seeds and pith.
  4. Roughly chop the fruit and put it through a food grinder or use a food processor to create a pulp.
  5. In a large saucepan, combine the fruit pulp and 6 cups of water.
  6. Bring the mixture to a rolling boil over medium-high heat, stirring occasionally to prevent sticking.
  7. Reduce heat to low and simmer gently for 20 minutes, stirring occasionally.
  8. Increase the heat to high again and boil rapidly for 20 minutes, stirring 2-3 times to prevent burning.
  9. Remove from heat and let the mixture cool slightly.
  10. Stir in 3 cups of granulated sugar.
  11. Return the saucepan to medium-high heat. Bring to a rolling boil, stirring continuously until the sugar dissolves completely.
  12. Continue to boil rapidly, stirring frequently. The marmalade is ready when it reaches setting point – a small amount cooled on a chilled saucer will wrinkle when pushed with a finger (approximately 20 minutes).
  13. Remove from heat and skim off any foam that forms on the surface.
  14. Ladle the hot marmalade into sterilized half-pint jars, leaving ¼ inch of headspace at the top.
  15. Wipe the jar rims clean, place sterilized lids and bands on the jars, and tighten securely.
  16. For added safety, process the filled jars in a boiling water bath for 5 minutes. Allow to cool completely. The marmalade will thicken further as it cools.
