How to Make Traditional Scottish Oatcakes
- Preheat your oven to 200°C (400°F).
- Line a baking tray with greaseproof paper.
- Melt 100g of lard in a saucepan until completely melted. Set aside to cool slightly.
- In a large bowl, combine 250g rolled oats, 100g wholemeal flour, 1 teaspoon salt and 1 teaspoon baking powder.
- Add the melted lard to the dry ingredients. Gradually add 50-75ml of cold water, mixing until a dough forms. You may need slightly more or less water depending on the consistency of your oats and flour.
- Lightly sprinkle your work surface with rolled oats. Roll out the dough to approximately 0.5cm thickness. Use a cutter or knife to cut out oatcakes.
- Place oatcakes onto the prepared baking tray.
- Bake for 12-15 minutes, or until the edges are golden brown and crispy.
- Remove from oven and let cool completely on a wire rack before serving.
