How to Make Traditional Scottish Oatcakes

  1. Preheat your oven to 200°C (400°F).
  2. Line a baking tray with greaseproof paper.
  3. Melt 100g of lard in a saucepan until completely melted. Set aside to cool slightly.
  4. In a large bowl, combine 250g rolled oats, 100g wholemeal flour, 1 teaspoon salt and 1 teaspoon baking powder.
  5. Add the melted lard to the dry ingredients. Gradually add 50-75ml of cold water, mixing until a dough forms. You may need slightly more or less water depending on the consistency of your oats and flour.
  6. Lightly sprinkle your work surface with rolled oats. Roll out the dough to approximately 0.5cm thickness. Use a cutter or knife to cut out oatcakes.
  7. Place oatcakes onto the prepared baking tray.
  8. Bake for 12-15 minutes, or until the edges are golden brown and crispy.
  9. Remove from oven and let cool completely on a wire rack before serving.
