How to Make Unsweetened Spiced Vinegar

  1. Combine 4 cups apple cider vinegar, 2 tablespoons black peppercorns, 1 tablespoon coriander seeds, 1 tablespoon mustard seeds, 2 bay leaves, 1 cinnamon stick (3 inches), 1 teaspoon red pepper flakes (adjust to your spice preference) in a non-reactive pot.
  2. Tie the spices together using cheesecloth or a spice bag to easily remove later.
  3. Bring the vinegar and spice bag to a boil over medium heat.
  4. Reduce heat to low and simmer gently for 10 minutes, allowing the flavors to meld.
  5. Remove from heat and let the vinegar cool completely.
  6. Once cooled, carefully transfer the vinegar and spice bag to an airtight glass or plastic container.
  7. Steep for at least 1 month to allow the flavors to fully develop. The longer it steeps, the more intense the flavor will become!
  8. After 1 month, remove the spice bag. Your Unsweetened Spiced Vinegar is ready to use!
  9. To make Sweetened Spiced Vinegar: Add 3 1/2 cups of granulated sugar to the infused vinegar, stir until dissolved.
